From Holy Goat:
A collaboration with our friends at Balance Brewing & Blending, this golden base beer was fermented in a white wine barrel previously inoculated with a mixed culture from Balance and Holy Goat. After 20 months of oak ageing with the addition of 40L of rhubarb juice, the beer was refermented for a further two months on 220g/L of locally grown Scottish blackberries and red gooseberries before bottle conditioning. The result is bright, vinous and juicy, with notes of red fruit pastilles, currant compote and a gentle oak. Limited to 468 bottles.
