Tequila Ocho Plata opens with bright, green agave, fresh-cut and slightly grassy, followed by a ribbon of citrus peel and a whisper of white pepper on the nose. There is a floral hint there, like jasmine, and a faint mineral note that suggests the soil beneath the fields where the agave grew. On the palate, the spirit is lively and immediate, the agave sweetness present but not cloying, balanced by a clean, stony minerality and a gentle spice that lingers on the finish. The texture is silky rather than oily, and the finish is long enough to reveal citrus pith and a touch of toasted agave fibers.
